(accidentally) low-fat muffins
My flatmate drew my attention to the bananas in our fruit bowl which were turning black, by informing me that I need to make banana cake.
So banana and chocolate chip muffins shortly ensued, but while they were in the oven I noticed that the butter that was meant to go in them was still on the side. It seems they didn’t suffer too much from this lack of butter.
The recipe I was basing this on was the banana and cinnamon muffins from the Hummingbird bakery cookbook. This is mine with the accidental and purposeful modifications.
Banana and Chocolate Chip muffins:
200g Plain flour
100g Wholewheat flour
1.5 tsp baking powder
0.5 tsp bicarb of soda
1 tsp cinnamon
100g caster sugar
60g demerara sugar
125ml natural yoghurt
1.5 tsp vanilla extract
400g peeled mashed banana
100g of chocolate chopped
(70g of melted butter – they would definitely be better with this)
makes 12-15 muffins
Whisk wet ingredients (except banana) together and add to dry ingredients.
Mix well, add banana and mix together.
Bake at 170C for 20-30 mins
